Today I decided to deviate from my usual banana oat cookie that I like to make for breakfast or as a sweet snack. I wanted to put a fall twist onto my classic recipe and I came up with something yummy yet sweet to satisfy my pregnancy cravings without piling on the calories.
Here's my recipe for my pumpkin banana oat cookies!
What you need:
-2 very ripe bananas
- 1/2 15oz can of pumpkin purée
-1/4 cup pure maple syrup
-3 tbsp pumpkin pie spice (or cinnamon of that's all you have on hand)
-2 tbsp brown sugar (or stevia if you wanna make it even healthier)
-2 cups whole wheat oats
-1 egg ( or 1/4 cup applesauce if you want to make it healthier)
Mix ingredients in a bowl-I always use my hands because I believe they are be best mashing tool when it comes to bananas! Bake at 375 degrees for 20 minutes
