Diary of a Fit Mommy's Healthy Hearty Crockpot Taco Soup


This is absolutely easy and endlessly amazing and will send you and the husband back for seconds! I have a strong love for Mexican food and soup, so I decided to combine the two-but in a healthy yet filling way. I made this up off the top of my head and it was DELISH! But I am gonna warn ya, its a tad bit spicy :) 

Spicy foods has been a pregnancy craving of mine!

Here's whatcha need to throw in your crockpot:

  • 1 bag frozen corn
  • 1 can pinto beans
  • 1 can red beans
  • 1 large can stewed tomatoes
  • 1 can diced tomatoes (or Rotel)
  • 1 can poblano peppers in adobo sauce (found in the mexican section)
  • 1 can green chilis
  • 1 can salsa verde
  • 1 can red chili sauce
  • 1 freshly cut onion
  • 1 packet taco seasoning
  • 1lb ground beef
  • pepper, salt, garlic powder to taste

Simply dump all ingredients into a crockpot and cook on HI for 5-7 hours.
