Healthy Toddler Muffins
HEALTHY TODDLER MUFFINS (super tasty!)
Ingredients:
- 1 cup cooked sweet potatoes or yams
- 2 large eggs
-1/4 cup sugar
- 1/4 cup apple sauce
- 1/4 cup water
- 1 teaspoon finely grated orange zest, or to taste,
-Squeezed orange juice to taste
- 1 tablespoon vanilla extract
- 2 cups wheat flour
- 1 1/2 teaspoons kosher salt (or 3/4 teaspoon table salt)
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 cup dried cranberries
- 1/4 cup oatmeal/enriched infant oatmeal
Directions:
Mix all ingredients together and bake at 350 degrees until light browned!
