Paleo Bacon Wrapped Asparagus Bundles

Looking for a dish that makes a tasty side or an awesome appetizer that's 100% Paleo friendly and absolutely delicious? Well, look no further! This recipe is sure to get tongues wagging! It also makes a great option for those who are on a low carbohydrate diet as well, but the best part of the recipe itself is that it is super easy and only takes a few minutes to throw together!
Bacon Wrapped Asparagus Bundles
Ingredients
  • 1 large bundle of asparagus
  • 1 package of thick cut bacon
  • sesame seeds for garnish (optional)
  • salt/pepper to taste (optional)
Directions
  1. Preheat oven to 400 degrees.
  2. Wrap two pieces of bacon around three asparagus sticks to make a "bundle."
  3. Place on a cookie sheet and bake for 15 minutes or until bacon is fully cooked.
  4. Serve as a side or an appetizer!


One Ingredient Strawberry Fruit Leather


Fruit roll ups were always my favorite snack as a child, growing up. I loved unraveling them and eating them little by little. However, nowadays, I do not enjoy them so much, having looked at the nutritional info. SUGAR! Nothing, but SUGAR! 

Where was the real fruit? Absent, of course.

So, I decided to make my own recipe-a healthier version with nothing but the real fruit involved. The best part about it? It only takes one ingredient: the FRUIT! Using the natural sugar, this recipe is sure to be a tasty and fulfilling snack without the guilt. However, if you would like a sweeter fruit roll up, you can add 1/4 cup of Stevia to this recipe.

One Ingredient Strawberry Fruit Leather

Ingredients
  • 4.5 cups of fresh strawberries
Directions
  1. Preheat oven to 225 degrees.
  2. Line a baking sheet pan with a 17 x 12 inch nonstick bakeware liner such as Silpat.
  3. Blend strawberries in a food processor or blender until smooth.
  4. Pour mixture onto the prepared pan; using a spatula to smooth it out onto the surface
  5. Bake for 7.5 hours.
  6. Peel and enjoy!


Garlic Parmesan Cauliflower Poppers


I have been searching high and low for the tastiest cauliflower recipes to help me take a liking to this odd vegetable. I started with the cauliflower pizza crust which was simply divine. Next, I tried making cauliflower poppers-and, boy, were they ever delicious! For a moment there, I forgot that I was actually eating a veggie. This recipe is not only perfect as a side, but it also makes a great appetizer to impress your friends!

My only piece of advice? Try not to eat the whole batch all at once!

Garlic Parmesan Cauliflower Poppers

Ingredients

1 head cauliflower; divided into bite sized pieces
2 tbsp garlic powder
1/2 cup shredded parmesan cheese
1/2 cup bread crumbs
3 eggs
Salt/Pepper to taste
Directions

Preheat oven to 400 degrees.
Combine & mix together the bread crumbs, cheese, salt, pepper, and garlic in a bowl.
Break and beat eggs in a separate bowl.
Carefully dip each cauliflower piece into the egg and dip in the bread crumb mixture.
Place on a greased cookie sheet & bake for 20 minutes or until golden brown.

Blueberry Lemon Zest Oatmeal


Oatmeal is one of my favorite breakfasts to make each morning. Not only is it so versatile- you can essentially add any ingredient you want to the mix! Oats are also wonderful for heart health and for sustained energy so it is no wonder why starting your day with a bowl does the body some good.
Here is my recipe for a blueberry lemon oatmeal using flax seeds and sweetened with a dab of honey!

Blueberry Lemon Oatmeal

Ingredients
  • 1/2 cup quick oats
  • 1 cup vanilla flavored unsweetened almond milk
  • 1 handful fresh blueberries
  • 1 tbsp grated lemon zest
  • 2 tbsp flax seeds
  • 1 tbsp honey

Directions
  1. Combine oats and milk in a saucepan over medium heat; stirring occasionally.
  2. Mix in lemon zest and honey.
  3. Cook for 10 minutes and remove from heat.
  4. Place into a bowl and top with blueberries and flax seeds.
