Healthy Pumpkin Pie Spice Oatmeal

Its FALL and what more do I love than PUMPKIN PIE! I have it every morning for breakfast when I am not chomping down on my Special K Protein cereal (love that stuff). No, really. 
Here is how ;)

  • 1/2 cup whole wheat oats
  • 3/4 cup coconut milk
  • 1/2 can pumpkin puree (not pie mix)
  • 1/4 tsp pumpkin pie spice
  • 1 tsp stevia
Mix all ingredients in a microwave safe bowl and microwave for 2-3 minutes depending on the consistency you desire-I love mine a little drier than most.

Top with coconut flakes or pecans!
