Cinnamon cookie dough bites
Serves: 16-18
Ingredients
1 cup raw steel cut oats or raw oat groats, soaked
1 cup nut butter (I used almond butter), unsweetened, unflavored
⅔ cup linseed (flax seed) meal
zest of ½ lemon
zest of 1 orange
⅔ cup sultanas (or raisins), roughly chopped
⅓ cup dates, roughly chopped
½ tsp cinnamon powder
¼ tsp nutmeg, ground
Instructions
Soak the steel cut oats in water for at least an hour. (Soak oat groats overnight.)
Rinse and drain the oats, try to eliminate as much of the water as possible.
Add all ingredients to a food processor and whiz until you get a dough-like consistency, slightly gooey and sticky.
Roll into bite sized balls and place in the fridge, covered, for at least an hour.
Sprinkle with cinnamon and serve chilled.
