What I'm Making For Thanksgiving!

Hey guys! Who all is ready for Thanksgiving?? I am so stoked to be making my SECOND turkey; last year's was a success and the husband enjoyed it thoroughly! I am cooking the same thing again with just  a few minor, healthier changes. I would love to share my dinner plans with you!

To start off, I am baking another butterball Turkey! I let my bird thaw in the fridge for a few days and before I bake it, I will remove it from the fridge to inject it with amazing concoction and for a little rub down!

Here is what I inject it with:
*1/2 cup I Cant Believe Its Not Butter; melted
*4 tbsp Tony C's seasoning
*4 tbsp garlic salt

Here is what I rub with it:
*1 cup extra virgin olive oil
*4 tbsp basil
*4 tbsp oregano
*4 tbsp rosemary
*3 tbsp salt
*3 tbsp pepper

Bake the bird at 325 degrees until juices run clear in the thigh. This usually takes around 4-5 hours depending on the pounds.

Corn casserole!
This is so easy to make. All you need is one can of corn, one can of creamed corn, and one box of jiffy!
To sweeten it a bit I will add some Splenda.
Mix all ingredients together, pour into a baking dish, bake at 350 degrees for 25 minutes

Garlic Roasted Asparagus

So simple. Toss asparagus with olive oil, salt, pepper, and garlic powder. Bake at 350 degrees for 15 minutes.

Of course this year, I am making my crustless guilt free pumpkin pie! For the recipe click here:
