Healthy Crustless Pumpkin Pie {PALEO}
Tonight for dessert, I created a healthy version of my favorite treat:
Crustless pumpkin pie.
Less than 100 calories per slice!
It was oh so good!!
Here's the recipe:
1 can Libbys pumpkin puree
2 eggs
1/4 cup coconut oil
1/2 cup coconut or almond flour
1/2 cup Stevia or Splenda
1/2 cup Coconut Almond Milk
1 tsp vanilla extract
3 tbsp pumpkin pie spice (love that flavor!)
1 scoop vanilla protein powder (optional, not pictured)
Preheat the oven to 350 degrees. Mix all of the ingredients together until smooth. Grease a clear baking pan (I used some coconut oil). Pour in the pan and cake for 30-40 minutes or until firm.
The end result?
Yup.. this was my hubby's piece. He went naughty and put chocolate syrup on his! Ha.
