Healthy Crustless Pumpkin Pie {PALEO}

Tonight for dessert, I created a healthy version of my favorite treat:
 Crustless pumpkin pie. 
Less than 100 calories per slice!
It was oh so good!!




Here's the recipe:
  • 1 can Libbys pumpkin puree
  • 2 eggs
  • 1/4 cup coconut oil
  • 1/2 cup coconut or almond flour
  • 1/2 cup Stevia or Splenda
  • 1/2 cup Coconut Almond Milk
  • 1 tsp vanilla extract
  • 3 tbsp pumpkin pie spice (love that flavor!)
  • 1 scoop vanilla protein powder (optional, not pictured)
Preheat the oven to 350 degrees. Mix all of the ingredients together until smooth. Grease a clear baking pan (I used some coconut oil). Pour in the pan and cake for 30-40 minutes or until firm.

The end result?


Yup.. this was my hubby's piece. He went naughty and put chocolate syrup on his! Ha.
