The MOST Simple Sushi Recipe EVER

I LOVE sushi. Its hands down one of my favorite dishes of all time. Not only does it taste amazing, and most rolls are in fact good for you, but its also very versatile and easy to make! There's no secret to it-its all in how you prepare it. Im going to share with you how to make the Cowboy roll-my favorite roll. Its a roll primarily made up of spicy mayo, beef sirloin, and avocado.

The Gracious Roll

Lets get our ingredients together. You will need:

For the sushi rice:
  • white long grain rice (2 cups)
  • 1/2 cup of rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
For the spicy mayo:
  • 3 fresh chopped green onions
  • 1 cup light mayo (hellmans is best) OR plain greek yogurt if youre going the healthy route)
  • 1/2 cup sriracha sauce! (located in the asian aisle)
For the main sushi ingredients:
  • 1 large sirloin steak seared on both sides-medium rare-sliced into long strips
  • 1 sliced avocado
  • sesame seeds
  • One-Two packs of Nori (seaweed sheets)
You will need a rice cooker and a bamboo mat in order to make sushi. You will also need cling wrap and Ill tell you why in the directions.

How to make the sushi rice:
In a large bowl, dump the cooked rice from the rice cooker and let cool. Pour the rice vinegar into a saucepan along with sugar and salt and let simmer for about 2-3 minutes. Immediately pour over the rice in the large bowl. Use a WOODEN (very important so you dont damage the sushi rice) spoon to fold the rice over itself (DONT STIR!) gently. Let sit.

How to make the spicy mayo sauce:
Stir the light mayo (or greek yogurt) with the sriracha sauce. Stir in chopped green onions and let sit.
Voila! Thats done.
Easy.

Now for the most complicated part thats really not THAT complicated:
How to make the sushi/
Start by laying a piece of cling wrap onto your bamboo map. When you are rolling the sushi, the cling wrap allows for better handling and grabbing of the roll-it also helps keeps things together without damage. It works wonders!

Next, lay a piece of Nori down on the cling wrap on the mat.

Now place 2-3 heaping spoonfuls of sushi rice onto the Nori, spreading the rice out carefully with the spoon.

Sprinkle the sesame seeds over the rice. Be generous.

Next, you're going to start out at the bottom and layer. First, a spoonful of spicy mayo spread across the rice in a line at the bottom of the Nori. Next you lay a piece of steak. Then the avocado.

If thats all the ingredients youre adding then you are ready to roll!

Rolling is the most difficult part.
Start at the bottom of the Nori and fold the end over the layered ingredients using the bamboo mat, squeezing tightly, making a cylinder shape. Release. See the shape you created and go with it. You will have to move the cylinder up your mat a little more each time. Keep rolling up little by little and pressing hard on the mat till you get to the top. Roll it very tightly or else it will fall apart! Once you have completed the roll, all you have to do is take a knife and cut!

Sprinkle pieces with sesame seeds, dot with sriracha sauce, or dip in soy sauce!

Please note, this can take up to an hour due to the prep. This makes around 5 rolls or more :)

ENJOY!
